lemonlemonI stripped the choriatiko sausage and ground the meat, then fried it with sliced onions in the extra virgin olive oil before adding it into the slow cooker with peppers, mushrooms, carrots and courgettes.  I added the handmade tomato sauce along with a tin of chopped tomatoes, and finished with a good handful of the wild oregano.
It cooked on low for 5 hours, and I served it with the hilopites pasta (and cheese).
